White Tea is produced by drying new growth buds and young tea leaves before any oxidation occurs. The taste is smooth and mild, but full and satisfying with a very pale liqueur. Many people believe that white teas have the lowest caffeine levels because of their mildness. However, the truth is more complicated than that. Most of the caffeine in tea comes from the tips and buds, which can actually make white tea some of the most caffeinated. 

In general, white teas should be steeped with water around 180° F (80° C) for less than 3 minutes, but the specific temperatures and timing will vary depending upon type and personal tastes.
